Research Interests
Study of natural products as functional foods and for the production of functional foods. Identification and quantification of bioactive compounds present in fruits, herbs and vegetables. Biological evaluation of functional foods and bioactive compounds in cellular and animal systems; and potential antioxidative, antimutagenic, antidiabetogenic capacity. Evaluation of the preventative effects of food on non-communicable degenerative diseases. Biotechnological production of bioflavors and evaluation of their properties. Study of plant and microbial prebiotics.
